1. Marinated
Vegetable Salad- Summer Favorite
1 large
Zucchini, sliced in quarters
1 Large
yellow Squash, slice very thin
1 carrot,
peeled, sliced thin
1/2 cup
chopped red onion, or just leave in whole
slices for garnish
4 radishes
2/3 cup of
your favorite Greek dressing
Directions In a
large Bowl, combine all ingredients, toss,
cover, refrigerate overnight, toss one more
time before service.
2. Mesquite Pork
Chops with Sweet Onions( Great for the BBQ
lover) Takes about 15 minutes to prep, 10 to
15 minutes to cook.
1 Package of
mesquite marinade mix( Zehrs has a good
variety!)
2/3 cup of water
2 tablespoons of
pure vegetable oil
4 1/2 inch thick
boneless pork chops.(if you do not prefer the
fat on your chops, leave on for flavor and cut
off after cooking.
1 large SWEET
onion, cut into 1/4 inch thick slices
Directions
1) In a shallow
casual dish, combine marinade mix, water and
oil. You can add a little white pepper or
your favorite hot sauce,as we do at home).
Add pork chops and onions, turn to coat.
Cover, put in fridge for a min. of 30 minutes.
2) While in
fridge heat your BBQ. Place Pork and onion on
grill on medium heat. Cook 4 to 6 minutes or
until pork is no longer pink in center. When
you turn, place the remaining marinade over.
